Happy April! I hope you all had wonderful Easter! It was a busy end to March for us with spring break, Easter, and a couple of birthdays all bunching together. It was a lot of fun, but I’m kind of glad it’s over. Now we can get back to our regular routine. I’ve noticed a lot of spring produce popping up at the farmer’s market lately, and that makes me happy. I love bringing some new veggies into the mix. I just need to dig through my recipes to figure out how. For now, here’s what’s on our menu for this week:
Monday: Baked Italian Chicken
Tuesday: Mexican Stuffed Shells
Wednesday: Tuscan Steak and Beans
Thursday: Stuffed Pork Chops with some grilled veggies
Friday: Make Your Own Pizza night!
